Thai Hom Mali Rice Golden harvest

Ingredients:

1.

Thai Hom Mali rice, washed and air dried till all water run off

400 grams

2.

Olive Oil

2 table spoons

3.

Minced garlic

1 ½ table spoons

4.

Chopped onion

1 ½ table spoons

5.

Snow peas

40 grams

6.

Red pepper, or Bell pepper, sliced

40 grams

7.

Chilli powder

1/2 teaspoon

8.

White wine

150 ml.

9.

Chicken stock

750 ml.

10.

Saffron

6.5 grams

11.

Fish fillet

12.

Shrimps

6

13.

Mussels

5

14.

Baby clam

10

15.

Salt

1/4 teaspoon

HOW TO COOK:

1. Mix chicken stock and saffron, add salt and chili power.
2. With medium heat, heat olive oil in the pan, saute garlic and onion.
3. Into the pan added red pepper, snow peas; stir lightly and add all seafood, stir lightly
4. When all the seafood almost done add rice and chicken stock, stir thoroughly
5. Put the pan over light heat approximately 2-3 minutes, and then pour all the contents on to the baking dish
6 Add white wine and close the lid, put into the oven for 20 minutes

Note, if the dish seems to dry, add more chicken stock. Served when hot.
